On the occasion of Diwali, not only the house but even the market and vegetable market get illuminated. Govardhan Puja takes place on the second day of Diwali. In this puja, women worship the cow. At the same time, special bhog is offered to Lord Shri Krishna after worship on this day. On the day of Govardhan Puja, annakoot is offered to Lord Krishna. Annakoot is a recipe made from different types of vegetables. On the occasion of Diwali, vegetables like cabbage, carrots, peas, beans come to the markets in winter. Eating all these vegetables is started from the day of Govardhan Puja. It is kept in the Bhog of the Lord and then eaten as Prasad. Ingredients for making Annakoot vegetable
Two potatoes, two to three brinjals, one cauliflower, 100 grams of beans, 100 grams of sageri, one carrot, one radish, two tinde, one arbi, 6-7 ladyfinger, 2-3 parwal, one capsicum, half a gourd, one Raw banana, small pumpkin, 4-5 tomatoes, one ginger, 2-3 green chilies, some green fenugreek, 100 grams green coriander.
Seasoning for Annakoot Vegetable
Oil, Asafoetida, Cumin, Turmeric Powder, Coriander Powder, Red Chilli Powder, Amchur Powder, Garam Masala, Salt.
How to make Annakoot
step 1 – Dust all the vegetables well and squeeze them. Peel the potato brinjal and banana. Also cut all the rest of the vegetables into medium size. Finely chop the leafy vegetables in it.
Step 2- Cut green chili, tomato and coriander into small pieces. Peel the ginger and grate it.
Now heat oil in a pan. Add asafetida and cumin seeds to it. When cumin seeds are roasted, add turmeric powder, coriander powder and fry lightly. Then add green chili, ginger and fry the spices.
Step 4- Now put all the chopped vegetables in the pan and mix salt, red chili powder and keep stirring the vegetable.
Then add a cup of water to the vegetable and cook till it comes to a boil. When the water starts boiling, reduce the heat and cover and cook for five minutes.
Step 6- When the vegetable becomes soft, add chopped tomatoes and cook it. Now add garam masala, amchur powder and green coriander to it. Your delicious Annakoot curry is ready.
